Copper plum-cake mould

In Italy, morning café au lait is traditionally accompanied by a little something sweet. The cake is often served early in the day, baked in a cake tin like this one and simply called "plum-cake".

Manufactured using ancestral techniques in the Naples region, the historic birthplace of Italy's greatest master copperware makers, this copper mold pays tribute to a rare savoir-faire handed down from generation to generation. Each piece is shaped by hand, then hot-tinned, ideal for firing.

Its thick copper wall ensures rapid, even heat diffusion, essential for delicate preparations such as sponge cakes, custards or entremets. This noble material has been prized for centuries for its incomparable thermal properties.

The mould is decorated with relief motifs. A brass ring is integrated into the structure to hang the mold on the wall, as was traditionally done in ancient kitchens.

Instructions for use and care

This mold is specially designed for oven baking, thanks to its tin-plated interior which is compatible with food preparations. It should not be used over a flame or direct heat source. To facilitate removal of the cake after baking, grease the inside with a little butter and sprinkle with flour.

Once used, clean the mold by hand with lukewarm water and a soft sponge. Avoid scouring products or abrasive sponges, which could damage the surface. Remember to dry it immediately to prevent the appearance of rust or moisture stains.

Over time, copper will develop a natural patina: a perfectly normal phenomenon that does not impair the mold's performance or safety. If you wish to restore its original shine, you can use a cleaner specially designed for copper.
