Description
Used since the 13th century for its thermal properties and light weight, tinplate is also highly resistant to corrosion.
The principle is simple: it's a steel sheet coated with a thin layer of tin to protect food from spoilage for healthy cooking.
Tinplate can withstand very high temperatures (300°c), but care must be taken not to expose it to direct heat, which is why oven baking is perfect.
With these pans, your pies will have a golden crust and your filling will remain moist.
When using our tart pans, always remember to butter and flour them if you want to be able to unmold them easily. After use, don't clean with conventional detergents. Instead, wash with Marseille soap and a soft sponge. Dry immediately to avoid any traces of moisture, and apply a thin coat of edible oil. Over time, the tourtière will develop a black patina, a sign that the culotte is forming.
