These fluted molds are available in 3 sizes:
- Small size ("bouchée" fluted) diameter ø35mm - height 35mm
- Medium size diameter ø45mm - height 45mm
- Large size (traditional fluted) diameter ø55mm - height 55mm.
Care for your fluting molds
Tin-plated inner surface: hand-wash with a non-abrasive sponge.
Copper outer surface: soft cloth and copper polishing paste.
Copper fluting moulds are not dishwasher-safe.
Tips for successful fluted baking with copper moulds
Baking cannelés, that little French pastry that's crisp on the outside and soft on the inside, requires special know-how.
Here are a few tips on how to make a delicious cannelé:
Preparing the molds: Generously butter your copper molds, even if they're already assorted. For easy unmolding, use clarified butter, which is more resistant to high temperatures. Be sure to cover all internal surfaces.
Oventemperature: Preheat your oven to a high temperature (230°C maximum) before lowering to a medium temperature (around 180°C or 350°F) after 10 minutes of baking. This temperature variation ensures a crisp crust and tender interior.
Filling the molds: Fill the copper molds two-thirds full to prevent the dough from overflowing during baking.
Keep an eye on your cannelés, especially towards the end of baking. Copper molds conduct heat efficiently, which can speed up the process.
Unmolding: Let the cranberries cool for a few minutes in their molds before unmolding. Use the tip of a knife to gently dislodge them if necessary.
