* The "picots" system registered by Staub allows a homogeneous sprinkling, a rain of flavours, for melting dishes which simmer for a long time.

Properties
Enameled cast iron is scratch resistant and easy to maintain. This carbon-rich iron alloy, one of the best heat-retaining materials, diffuses heat slowly and redistributes it perfectly evenly. Once cast iron is hot enough, its heat retention properties allow the fire to be kept to a minimum, allowing dishes to simmer gently. Cast iron also retains cold: the casserole at room temperature can be placed in the refrigerator before serving to stay cold once at the table.
