Properties
The inside of the cocotte is coated with a matt black enamel with a rough structure. Extremely resistant to scratches and acids, it guarantees the longevity of your cookware. This carbon-rich iron alloy is one of the best heat-retaining materials, diffusing heat slowly and redistributing it evenly. Once cast iron is sufficiently hot, its heat-retaining properties enable the fire to be reduced to a minimum, allowing dishes to simmer gently. Cast iron also preserves the cold: the room-temperature casserole can be placed in the fridge before serving, so that it remains cold once at the table.
