La Siavo black olive oil
Old-fashioned olive oil as our grandmothers and grandmothers knew it in their distant youth.
Description
Renowned for its rich, intense "black fruity" taste, this oil exudes aromas of candied olives, mushrooms, cereals, cocoa and even, according to some palates, freshly ground black tapenade.
For the old-timers, this is the oil with the "true taste of olive oil".
This distinctive taste is due to the extra storage of the olives for several days, allowing them to "coufire" (confire in Provençal).
It is this fermentation that enables it to develop such a wide range of flavors and power, but always with a hint of sweetness.
Cold-extracted in a mill by a brotherhood of Provençal monks, it is delivered directly to the store by these same monks, with the ecological aim of limiting transport and journeys.
Of course, it's excellent in salads, but it's best used to spice up legs of lamb and potatoes, and even desserts (particularly in castagnaccio).
A quick and delicious Provençal snack:
If you want to eat on the run without consuming the wrong products, there's a very simple recipe that involves mixing a little good olive oil with brousse. A little salt, a little pepper and you're in for a treat!
