Raised in the heart of the Alpilles
This oil is pressed and blended at Château d'Estoublon, established in the Alpilles mountains since 1489. Five Provencal varieties (Salonenque, Bouteillan, Grossane, Béruguette and Picholine) ripen under the Provencal sun before being pressed within 24 hours of harvest. Environmentally-friendly farming preserves this unique terroir of complexity and freshness.
Masterful blending
This cuvée blends the distinct characteristics of each Provençal variety to create a multi-faceted oil. The miller's job is to blend the five varieties according to the year and harvest. Mechanical cold extraction preserves the olives' natural aromatic compounds. This traditional method respects the fruit and delivers an extra virgin oil with preserved taste qualities.
Tasting notes
The blend reveals an assertive vegetal character, marked by the liveliness of olives picked at the beginning of the season. The attack on the palate develops a velvety texture, followed by a harmonious progression between roundness and freshness. The aromas unfold towards nuances of tender herbs and green fruit, characteristic of Provencal alpine terroirs.
Use in cooking
This oil goes well with Mediterranean dishes of character, enhancing grilled vegetables, fish and goat's cheese. Its balanced character makes it ideal for everyday use, revealing its aromas on a simple slice of bread. Its finesse goes equally well with hot dishes and seasonings.
