The history of the Commercy madeleine
The Commercy madeleine is a delicacy with its roots in a rich and legendary history. According to tradition, this little shell-shaped pastry was created in the 18th century by a young cook named Madeleine Paulmier, who served her creations to King Stanislas Leszczyński, Duke of Lorraine and former King of Poland. Seduced by their sweetness, the king popularized them, naming them after their creator. Since then, Commercy has become the undisputed capital of the madeleine.
