Properties
The inside of the cocotte is coated with a matt black enamel with a rough structure. Extremely resistant to scratches and acids, it guarantees the longevity of your cookware. This carbon-rich iron alloy is one of the best heat-retaining materials, diffusing heat slowly and redistributing it evenly. Once cast iron is hot enough, its heat-retaining properties mean that the fire can be reduced to a minimum, allowing dishes to simmer gently.
