This accessory is fitted to the rear of your pasta machine. Start by placing two sheets of pasta, 150mm wide and the thickness of your choice, previously prepared with the sheeter. Once caught in the roller, let them hang down on either side of the machine. Place the guide in position, spoon three spoonfuls of filling into the center (you'll need to add more depending on the length of your sheet) and turn the mechanism. A tray of ravioli, each measuring 45 x 45mm, comes out the back, ready to be used, cooked and eaten.
Recipe for ravioli dough
A dough preparation consists of:
- 250g soft wheat flour type "00"
- 250g durum wheat flour (semolina)
- 5 whole eggs and water to a total weight of 250g
And please, no salt!
