Description
The name "moule à manqué" was given to this utensil in the 19th century, when a pastry chef at Félix (a famous Parisian grocery store whose reputation lasted 150 years) failed to make a sponge cake. To avoid throwing it away, he mixed in butter and crushed almonds. His preparation, called "Manqué", was a success and gave its name to the mold used.
Made in France, and more precisely in Touraine, by an historic manufacturer, these molds are designed for both everyday and professional use.
Their steel construction ensures excellent heat transmission, while the professional, two-layer non-stick coating (guaranteed PFOA-free) makes removal from the mold effortless.
The height of the molds varies according to their diameter: from 30 mm to 55 mm.
For maximum longevity of your mold, do not cut your preparations inside the mold.
