This professional knife is built around a blade of Sandvik 12C27M Swedish stainless steel.
At 56-57 HRC, the alloy stays sharp roughly twice as long as ordinary blade steel, so you spend less time at the sharpening steel and more time working.
Forged in Thiers by Fischer-Bargoin, a name in the French knife trade since 1859, these knives are designed to meet the hygiene and safety standards of professional kitchens and butchery. The two-component handle pairs a polypropylene core with an elastomer grip coating that stays secure even when wet.
