Description
The adjustable heart-shaped pastry frame is for building a layered dessert, a bavarois or a fraisier in the shape of a heart without buying a mould for each size: set the dimension, place the frame on the dish, fill it, and open it to unmould.
It is in stainless steel, 5 cm high, and adjusts from 12 to 26 cm, giving eight heart sizes. A notched stainless steel band slides through a tab that locks it at the chosen size, like a belt buckle.
Line it with acetate for mousses and remove it once the dessert has set in the fridge; for a sponge, butter it as you would a standard ring. After use, hot soapy water and a wipe dry: stainless steel does not rust and does not hold odours.
