Mushroom brush

Description
The mushroom brush is for cleaning mushrooms without running them under water. Ceps, chanterelles, button mushrooms: the earth, sand and bits of moss come off dry, and the mushroom keeps its flavour and holds together when cooked.
It is shaped like a small mushroom: a round cap in oiled beech that you hold between thumb and forefinger, and a stem fitted with pale horsehair, soft enough not to bruise the flesh of a chanterelle.
Brush from the cap towards the stem, going through the gills and around the collar, then cut off the earthy base with a knife. For the brush itself, a wipe with a tea towel is enough; if you rinse it, dry it straight away and leave it to dry bristles up.
A small autumn object that often ends up in the foraging basket.
