Description
This natural sharpening stone, the two-grit « L'Idéale » model, brings the edge back to kitchen, pocket and workshop knives. It is 20 cm long and has two faces: a coarse face for roughing out, a smooth face for finishing.
It is a schistose sandstone quarried in the Ariège Pyrenees and worked in Saurat by La Pierre à aiguiser des Pyrénées, the last French maker of natural sharpening stones.
Use it dry or wet; with a little water, the contact is gentler on the steel. Hold the blade at about twenty degrees, start on the coarse face if the edge is well worn, then finish on the smooth face. When it clogs with metal particles, scrub it under hot water with a drop of washing-up liquid and rinse.
