Description
A maryse, the flexible rubber spatula used by pastry chefs, for scraping the bottom of mixing bowls, folding in whisked egg whites without knocking them down and emptying a jar to the last spoonful. The blade follows curved sides and leaves nothing behind.
The blade is rubber, the handle beech wood. It measures 24 cm long and 5 cm wide. It is a model for cold preparations: creams, mousses, cake batters, cooled ganaches. Do not leave it in a pan on the heat; the rubber would not stand it.
After use, wash it by hand in hot water and dry the handle straight away, without letting it soak, so the wood does not swell. The rubber may keep a little of the colour of a tomato sauce, which is of no consequence.
