Crêpe spatula

Description
The wooden pancake spatula, the one used in Breton crêperies, for lifting and turning the crêpe on the bilig (the cast-iron crêpe griddle) or in the pan. Its thin, flat blade slides under the crêpe without tearing it, and the wood scratches neither the cast-iron plate nor the coating of a crêpe pan.
It is beech, a hard, odourless wood, and measures 30 cm long: enough to keep your hand well away from the hot plate.
After use, rinse it in hot water, wipe it and let it air-dry, never in the dishwasher or against a radiator, or the wood will split. It darkens and takes on a patina with each Candlemas.
It pairs with the beech crêpe rake, used to spread the batter in a circle on the plate: together, they are the basic kit.
