This almond and nut grater reduces nuts to a fine powder or small pieces, for marzipan, a frangipane or a walnut tart. It also grates chocolate into shavings, and hard cheese.

It is a drum grater: a pierced stainless steel cylinder turns inside a plastic body, driven by a crank handle at the back. Pour the almonds into the hopper on top. An adjustable clamp fixes it to the edge of the table. It stands about 30 cm tall.

Work with dry almonds; damp nuts stick to the drum. Turn at a steady pace, without forcing. After use, remove the drum, wash it in hot water and dry it well.

Almond powder grated as needed keeps its oil and its flavour, where the shop-bought kind soon goes rancid.
