Description
A socca pan is the large round copper pan used to cook socca, the chickpea-flour flatbread of Nice, and its Ligurian cousin, farinata. A wide, shallow pan, 32 cm across, that heats up fast and hard.
It is made of hammered copper, tin-lined by hand on the inside, the layer of tin keeping food from touching the copper. Made in Italy by Cu Artigiana, with a ring for hanging it on the wall.
Oil the base with olive oil, pour in a thin layer of batter and bake in a very hot oven. Serve from the pan, with a wooden knife or spatula: tin scratches under metal. No dishwasher, no heating it empty; wash by hand and dry straight away. The tin lining can be redone once it wears.
