Savor the authenticity of Provencal festivities with these white and black nougats, handcrafted in Allauch since 1834.
To complete the 13 desserts of Provence, pair them with calissons d'Aix.
Outside the festive season, this delicacy can also be enjoyed with coffee, but can also be cooked iced, grilled or even melted.
White or black nougat?
The main difference is the cooking method. White nougat is cooked in a bain-marie, making it unctuous and very tender, while black nougat is cooked over a high heat, caramelizing it and making it harder and crunchier.
White nougat is made with stiffly beaten egg whites, lavender honey, sugar, almonds and pistachios.
In contrast to white nougat, black nougat is made without egg whites and with more almonds. It also contains honey and pistachios.
